Chicken Crust Pizza
Easy, high protein and low carb
A high-protein, flourless pizza with a crispy chicken crust, melty mozzarella, fresh pesto, and artichokes.
■ Ingredients
For the crust
350 g ground chicken (12 oz)
2 large eggs
20 g grated parmesan cheese (1/4 cup)
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp dried oregano
1/2 tsp dried basil
For the toppings
100 g low-moisture mozzarella, grated (3.5 oz)
80 g pizza sauce (1/2 cup)
2–3 tbsp pesto
80–100 g artichokes, drained and sliced (3-4 oz)
Fresh basil leaves
■ Instructions
Cut the chicken breast into chunks and place it in a food processor. Pulse a few times until it turns into ground chicken. You want the texture to be finely minced and cohesive, but not completely smooth like a paste
Transfer the ground chicken to a large bowl and add the eggs, grated parmesan, salt, black pepper, oregano, and dried basil. Mix everything until fully combined. The mixture will feel softer than a traditional pizza dough, but that’s exactly what you want
Preheat the oven to 200°C (390°F).
Line a baking tray with parchment paper and spread the mixture into a thin, even circle. The thinner the crust, the crispier it gets.
Bake for 25 minutes, or until the edges are golden and the crust feels firm.
Once the crust is baked, remove it from the oven and spread the pizza sauce evenly across the surface. You can use as much or as little as you like, but around 80–100 grams gives the perfect balance without making the crust soggy.
Scatter the grated mozzarella generously over the top. Add the sliced artichokes over one half of the pizza, leaving the other side plain for the pesto. Baking the pesto at high heat can dull its flavor and color, so adding it fresh at the end keeps it vibrant and aromatic.
Return the pizza to the oven for another 7–10 minutes, just until the mozzarella is fully melted and bubbly.
Remove from the oven and spoon the pesto over the plain half of the pizza. Finish with fresh basil leaves for a bit of freshness and color.
Let the pizza rest for a minute or two before slicing — then serve immediately while the cheese is still perfectly melted.
